1 Mississippi Moma + 1 Mountain Mother in law = good time

We went to Lookout Mountain in Georgia this weekend. My mom drove up from Mississippi and stayed with us for the weekend, too. I love having her there with us. My in-laws are so much fun and nice so she always feels loved. My MIL is a hoot and they just had a good time.

Guest Blogger: Love Notes from the Fickle Monester, Part 13

Dearest Friends and Strangers and Sisters,

Wear yourselves out.
Wear out your toes and your lips. Wear out your elbows, your thighs, your feet, your lungs.

Wear out your hands. Wear out your hearts.

About one month ago an old man died, and I listened to his son talk about the father's life. The son said there was one thing he knew for certain about his father: he truly wore his body out. He wore his body out. What a perfect eulogy to a life lived completely. May we all wear out bodies out.

Somedays, I really do not like working hard. I would prefer to be lazy, surprise! Quite often, the idea of letting my mind and body settle into a stasis. I justify and whine and sleep and settle. Sometimes running in 100 degree weather or working circuits or being patient with my students or considering the possibilities of love really seems impossible. More often than I wish, I just don't like sweating or moving or thinking or loving, but at the end of my life, I really hope someone will say, "Cora truly wore her body out."

I suppose we weren't given these temples to waste. We weren't given these souls to misuse. We were given to use, to roam, to learn, to grow, to laugh, to move, to sweat, to work, to love, and  to weep.

We were given to wear out.

So work hard, friends.
Do not stop. Be tireless and fearless.
Wear your bodies out. Wear your minds, hearts, and souls out.
Don't you waste a single bit of this precious give; I dare you.

P.S. My dad and I are running the Chic-Fil-A 5K tomorrow morning! Our confirmation emails always have quotes, the following is my favorite; Steve Jones (who is really important for something) said, "If I am still standing at the end of the race, hit me with a board and knock me down, because that means I didn't run hard enough."  See, Steve Jones wants you to wear it out too!

Also, HAPPY MEMORIAL DAY. Did you know it was once called Decoration Day? Shall we all remember and honor men and women who have certainly worn their bodies out for us.

Happy Thursday

Things just get down to business

  • New president is being named today... lots of meetings and a big press conference tomorrow!
  • We ran last night but I accidently set my iphone c25k program to week 2 day1 instead of week 1 day 2 so we did a lot more running than we should have but we did it so that felt good. I realized it in the middle of the run so there was no changing after I was half finished.
  • Half day of work tomorrow and I'm off on Monday
  • We're heading to Trenton, GA for a few days to hang out for Memorial Day!
  • My mom is driving up from Laurel, MS to stay with us!!!
  • We plan on seeing Pirates of the Caribbean

Hello Dearie

My dear friend, Dawn and one of my favorite sunday school teachers/mom, Cyndi created Hello Dearie as a way for them to be creative and do something they love, sew! They began sewing dolls, aprons, pillows... all kinds of goodies. I have an apron made by them that they gave me as a wedding gift and I bought a doll for my neice last Christmas. I love everything they do b/c I know each piece is made with love and really cared for. They really are the sweetest people you'll ever meet.

c25k

I did it! Yesterday I started the Couch to 5k plan. I've had it downloaded on my iPhone for weeks now just waiting and we finally went out yesterday. I put on my new shoes and felt like I could conquer the world!



It wasn't that bad either. I forgot I had already uploaded a playlist so it was funny listening to the songs. Cody ran with me and he didn't enjoy them very much.. ha. It was a lot of Girltalk so I think it was fun. My outer calves(calf) muscles hurt. I need to strengthen my poor nubs.

I rode my bike to work today too. I think I'm suppose to rest each day in between but I figured this would help me keep going. I'm excited about the plan now that I have some official to go by. Please cheer me on... pray for me... I need some encouragement and maybe even some yelling at if I stop.

My diet is still not the greatest but I've learned to stop finishing my plate. We went to Mellow Mushroom yesterday for lunch. I had a slice of pizza and a salad. I ate lots of mushrooms on my salad.

If you've never been to Mellow Mushroom, you should go... but if you've never been to the one in Clemson, you should go there. It's in an old house and the inside is gutted out but if you look up they have kept all of the old furnishings in there. It's really neat. I'll take a picture oneday to show you all!

After work, we went to a new burger joint in Clemson.... The Burger Joint :)
I loved it. Kind of pricey but it was good. I got a burger and sweet potato fries. Cody got the Clemson burger with pimento cheese on it. He enjoyed it too. The inside was pretty awesome too. The tables all had awesome glass tops with different pop culture references.

And yes, I did eat that before I went running. Not a good idea I know but atleast we didn't go eat the frozen yogurt like we had planned!

The Help


Kathryn Stockett, a Mississippi native,  has captured what life was like in Jackson, MS in the 60's in her book The Help. I enjoyed it so much. It made me every emotion possible reading what happened between white families and black maids. I think the book does a good job of explaining the love and hate that went on between white and blacks during this time. If you haven't had a chance,  you should go read it. The movie is coming out soon. I love Emma Stone. I'm so glad she's in this movie.

After reading it, I sat and thought what character would I have been. I mean, I grew up there... decades later, but that doesn't mean it's changed all that much. I have family members who still think the way some characters in the book do. I really hope I'd be like Skeeter or Lou Anne... and even Cecil Foote.

Lookin' like a lobster

We're home! This trip was much needed. Last week and month have been tough on us and we were glad to get away and not have a care in the world. We stopped in Columbia and picked up John and some new pairs of running shoes. We had lunch with one of my favorites from college, Julianna aka Ju baby. It's about a two hour drive from there. We drove around for a little bit searching for a hotel and then made a reservation through travelocity and got it cheaper from when we called to get their rates. (awesome!) I love a good deal.

It was bike week in MB so it was somewhat busy, but not too bad. Our lil' Jap, Arianne drove down and met us, too. We had fun. I wish I was still there. We are burnt though. Overcast skies are so deceiving. ha.

I woke up at 6:30 and headed to Old Navy to buy $1 flip flops and a bathing suit for Cody. That has inspired us to take a day trip to Myrtle Beach. We'll be back tomorrow!

Guest Blogger: Love Notes from the Fickle Monster, Part 12

Today, I ate a scone and a piece of cake, chocolate cake with whipped frosting....and they were good. So stinkin' good. Oh mercy. If or when I eat like this, I quickly follow the event with a little trip to the whipping post. "Hey CORA, You're so fat...blagh blagh blagh....you'll never reach your goals....blagh blagh blagh.....you're gonna break the stairmaster...blagh." I say really sweet things, things that make me want to be better and kinder and lovelier. I stand in the stocks, head lowered in shame, and wait for someone to stop by and joint in the tormenting, but nobody ever does.

In addition to saying mean things, I also like to argue with myself about going to the gym. After my excursion in the blessed Land of Carbohydrates and Joy today, I walked to my car and saw the wretched yellow duffle which carries my gym attire and an ounce of truth. I wish I could write exactly what went through my mind during the five minute drive to the gym, but I am simply going to have to write from memory. Pretend you're watching a movie or reading something interesting.

(Cora walks to car, sees bag, frowns.)

Cora's Mind: UGHHHHHHHHHHHHHH, gym. Wait! You don't have to go; you can just go home and run.

(Cora smiles.)

Cora's Mind: Whatever. If you go home, you'll sit in that stupid chair and eat your weight in Fiber One Raisin Bran.

(Cora frowns.)

Cora's Mind: Just get in your car, smile at that student who is waving at you, pretend you're happy, and go. You can decide on the way. That is reasonable right?

(Cora gets in the car, starts it, Jimmy Eat World is singing to her. She's on her way.)

Cora's Mind: Ok, if this light stays green, go home.

(The light turns red.)

Cora's Mind: BOOOOOOOOOOO! You can always turn around. Wait, you aren't turning around. You're tired and in a sugar coma. YOU AREN'T THINKING STRAIGHT. Ok well, if you make through thirty minutes, you can buy yourself something nice, like a Sprite Zero.

(She goes to the gym.)

There was a lot more wasted thought on whether or not to go, but I got tired and bored of writing.

Let's face it: sometimes we need to give ourselves a break. We need to forgive ourselves for eating cake and hating the gym. We need to realize that it is O.K. if we don't feel quite up to it or 110%. Sometimes we aren't at the top of our games, and sometimes we'd rather go home than go big. I think lies should not be allowed to wander, but if they do, forgive. We've all got our own crap going on; so, stand in the stocks for a little while but don't expect someone to come by and throw tomatoes. On the other hand, don't expect someone to come by and let you out. Do it for yourself; let yourself off the hook every once and a while. Just do it. Nike that sucker!

We must keep going. We can't quit, even when we eat cake or want to the elliptical into a deep, deep hole. Throw yourself a little tiny pity party, then put your big girl pants on and keep truckin'.

Today is a little less inspiration and a little more "let me tell you about the fact that I am struggling and sometimes don't care." I am living in the 160's, and I can't quite seem to blast past the hump. Hopefully next week will be a breakthru week, and I'll have something meaty to say when I'm not feeling so meaty.

Until the next time folks, keep on living, keep on breathing, keep on struggling, keep on. I dare you!

stuff you should know...




Put one foot in front of the other...

I love this song. It makes me want to hike a mountain, run a marathon... or do something epic...

Dinner

 I'm starving. I think I'm making this for dinner...


•5 ounces cream cheese, softened
•1/4 cup light sour cream
•10 ounces enchilada sauce (canned is just fine)
•1 cup shredded cheddar cheese, divided
•1 cup shredded monterey jack cheese, divided
•2 cups cooked shredded chicken
•1 cup frozen corn kernels, thawed (canned corn works just fine, but drain it first)
•4 oz. diced green chiles (I used the tiny can you get by the taco sauce)
•1/2 teaspoon chili powder
•1/4 teaspoon cumin
•Salt and pepper
•4 scallions, thinly sliced
•8 8-inch flour tortillas
Preheat the oven to 325 degrees. Spray a 9×13 dish with cooking spray.


In the bowl of your mixer cream together the cream cheese, sour cream, and 1/2 of the enchilada sauce. Stir in 1/2 cup of each type of cheese.

In a second bowl toss together the chicken, corn, cumin, chili powder, salt and pepper, green chiles, and half of the scallions. Add the chicken mixture to the cheese mixture and combine well.

Spread about half of the remaining enchilada sauce in the bottom of the baking dish.

Spoon the filling into each tortilla, roll the tortilla up, and place in the baking dish with the seam down. Pour the remaining enchilada sauce over the top of the filled tortillas and sprinkle with the remaining cheese. Bake for 20-25 minutes or until hot and bubbly. Sprinkle with the remaining scallions and serve.
