Sweet Potato Lasagna


I made this recipe last night. Haven't tasted it yet though. It's for dinner tonight! 
I didn't have a mandolin to slice the sweet potatoes so this was a little tough. Thank God for my husband. 







Ingredients:
1 lb extra lean ground turkey
1 medium onion, chopped

1/2 cup chopped red pepper
1/2 cup chopped yellow pepper
1/2 cup chopped mushrooms
1 tsp black pepper
1/2 tsp cayenne
pinch of salt
1 tbsp garlic powder
3 cups tomato sauce (I used bottled, no sugar added)
1/2 cup water
Handful of spinach leaves
1 large sweet potato
Feel free to add cheese if you like!

Instructions:
1. Preheat your oven to 350.
2. Brown your turkey meat in a pot with onion and spices.
3. When meat is completely cooked, add peppers, tomato sauce and water. Let simmer for 10 mins.
4. While that mixture is simmering, peel and slice your sweet potato. I used a mandolin, but you can attempt to do it by hand.
5. Grease a 9×9 baking pan with some coconut oil or EVOO and lets begin to layer.
Layer some meat sauce, a layer of sweet potatoes, then sauce, then sweet potato, then sauce, spinach, more sauce and sweet potato.
Cover baking dish with foil and bake for 30 mins.
After 30 mins, remove the foil and bake for another 15 mins.

Happy Trails

On Saturday morning, Cody and I dominated the cross country trail behind our house. It is 2.5 miles. It has a huge hill and lots of different terrain. I can't imagine running it twice like they do during a race. 

It was  great day to be outside though. Cody snapped this shot at the end. Love this place. 


SWU Christmas Dinner

Cody and I attended the annual Christmas dinner at SWU this weekend. This year instead of a sit down dinner, they had a buffet style appetizer style meal and a candy bar for the kids. It was a nice time and the all the kids that attended got a free gift from Santa. It was sweet. We even got Christmas bonus checks!

Brett Photography

Last week, my sweet friend, Brett Seay came to visit and she snapped a few photos of us...







I hate the cookie lady...

This old man looked about 80ish... and he was running while I was walking. Not a confidence booster. 

I walk this hill on my walks everyday. It's the hardest hill on campus so I know I have to do or my walk won't be worth it.  

I finally got my nameplate! 


and then this happened. The cookie lady came and brought brownies with cookies inside. I pinched off two pieces and then threw the rest away. I was proud of myself, but hate that ate it.

This is basically my life these days. I really want an omelette right now. 





Lunch with Alex at Grill33 was tricky, but I had steak for the first time in a month.

Sunday Funday

This Sunday, the Lady Tigers had their first home game in 3 weeks so we went to the game and they won! They played Jacksonville. It was a good game and great to see the team playing as a team. 

Emily came with us even though she doesn't like sports.

They were ahead the whole time. I was so proud of them! 


After the game, we picked up the kids and headed to church. They gave out light up bracelets and tshirts for our upcoming series, Fully Alive. Check out www.newspring.cc for more info! It's going to be great! 



And then had to prep my meals for the week! 



Treat meal

Last Friday, Cody, John, Carissa and Emily all piled in my car and we headed to my favorite pizza place. It took us an hour to get to the Millhouse in Greenwood, SC, but so worth it. We had planned to have my treat meal on Friday night and I knew exactly what I wanted.
